Quinoa Bowl with Black Bean

- 3/4 cup canned black beans, rinsed
- 2/3 cup quinoa, cooked
- 1/4 cup hummus
- 1 tbsp lime juice
- 1/4 medium avocado, diced
- 1/2 tomato, chopped
- 1/2 onion, chopped
- 1/4 red sweet pepper, chopped
- 2 tablespoons chopped fresh cilantro
Mix the beans and quinoa in a bowl
Add the chopped tomato, the chopped onion and the chopped red sweet pepper
In a separate small bowl, blend the hummus and lime juice, adding water until you achieve your preferred consistency.
Pour the hummus dressing over the beans and quinoa.
Garnish with avocado and cilantro.
